Greek Shrimp


Greek Shrimp

This is my version of a typical Greek taverna dish. So delicious!!

Ingredients:
1 lb peeled and cleaned raw shrimp
2 Tbsp olive oil
1 small onion, chopped
3 cloves of garlic or equivalent minced/dried garlic
1 Tbsp dried oregano
12 oz diced tomatoes
4 oz crumbled feta cheese
fresh or dried parsley for garnish

Directions:
Cook shrimp in a skillet with 1 Tbsp of the olive oil until firm and pink, then remove them from the pan and put them in a baking dish, distributing them evenly.
In the same pan, add the rest of the olive oil and cook the onion until tender. Add the garlic and oregano and cook a minute or two longer, then add the tomatoes and cook another two minutes or so. Season with salt and pepper to taste.
Pour the sauce over the shrimp and top with the cheese. Broil until the cheese is toasty.
Sprinkle the top with parsley and serve. Opa!
