Chicken Zoodle Soup

Delicious and filling! I usually make this just for myself, so here's the recipe for one serving. I keep the ingredients ready, cooking the chicken and mushrooms in advance, so I can throw it together for a quick meal anytime. It's high in muscle-building protein, as well as a good source of collagen, very low carb (keto friendly), low calorie and high in phytonutrients.


Add to a microwave-safe bowl:

  • 1 cup chicken bone broth
  • 4 oz cooked diced chicken
  • 1/4 cup canned diced tomato (drained)
  • 2 oz zoodles (spiralized zucchini)
  • 2 oz cooked mushrooms
  • salt to taste

Heat to taste and enjoy! Try with different meats and/or veggies for variety. 😃
